Undressed Lasagna [Recipe]

I'm constantly on the hunt for how to make non-slow-carb deliciousness fit into a slow-carb lifestyle.  Try out this AWESOME lasagna recipe that will fill you up but without the heaviness of the pasta.  While most cheeses are not Slow Carb compliant, small amounts of whey cheeses (ricotta and cottage cheese) are allowed.

(Measurements are approximate and fit a glass 8x8 baking dish)


➡️ Eggplant strips (remove the skin)

➡️ 1 lb ground turkey, cooked (or any ground meat)

➡️ 1/2 cup ricotta cheese 

➡️ A few white mushrooms, sliced

➡️ 1/3 cup sliced black olives

➡️ 1-2 tbsp dried basil

➡️ 1/2 to 1 cup plain tomato sauce (I make mine from tomato paste)

➡️ Salt 'n' pepper to taste


 ✔️ Brush the bottom of the dish with grapeseed oil.

✔️ Put the eggplant strips on the bottom of the dish and brush with more oil, then cover lightly with tomato sauce.

✔️ Add remainder in this order: turkey, mushrooms, olives, basil, salt 'n' pepper, cheese, tomato sauce.

✔️ Brush cheese and tomato sauce to cover contents of dish. (Could also mix all ingredients except eggplant up and put in dish.)

✔️ Cover contents with more eggplant, and brush with grapeseed oil to cover.

Bake for 20 min at 375 F.

Seriously good.
