I find this recipe works best with cooked green lentils or traditional chana dhal.
I soak and cook the lentils from scratch, but you can buy them in a can if you're looking to save time or don't want the hassle of soaking and cooking. Rinse and drain them if you get them out of a can!
- 1-2 cup cooked lentils
- 2-3 tbsp grapeseed oil
- 1/2 tsp salt
- 2-3 tsp spices
Good spice options:
- garlic powder & paprika
- onion powder & chili powder
- cumin
- chipotle powder
- curry blend powder
Spread on a cookie sheet lined with parchment/baking paper (trust me, this will make clean up easier), and roast at 400F for 20-30 minutes. May need to stir/spread around after 10 minutes.
These go well with scrambled eggs, leafy green salad with oil & vinegar dressing, or by themselves as a quick snack. I tend to put a couple of tablespoons in a small bowl and snack on them with a spoon.
