Almond Balls [Recipe]

Someone gave me this recipe, originally from a weight loss book (not mine, I'm happy to say) - I'm afraid I don't know the name of the book, but the original recipe is called Almond Cinnamon Balls and is credited to Elaine Ross.

I've bastardized them a bit to have less sugar, no artificial sweetener, and more flavour.

They're freaking delicious.

Ingredients:

  • 1 1/2 to 1 3/4 cups almond meal (measure same amount of almonds and grind in a blender if you don't have almond meal handy)
  • 1 tbsp ground cinnamon OR 1/2 tbsp ground cinnamon plus 1/2 tbsp allspice
  • 1/2 tbsp sugar OR 1-2 tsp vanilla
  • 2 egg whites

Variation:

  • 1 1/2 cups almond meal
  • 1/4 to 1/2 cup unsweetened coconut
  • 1-2 tbsp finely chopped dried cranberries
  • 1-2 tsp vanilla
  • 2 egg whites

Directions:

  • Mix together the dry ingredients (almonds, spices, etc)
  • Beat the egg whites with a whisk or fork until they start to stiffen (ie. are really foamy)
  • Mix egg whites and vanilla into dry ingredients
  • Form into balls and place on baking paper on a baking sheet.  I use a large cookie scoop and it makes 12-15 balls.
  • Bake at 350 F for 10-12 minutes.  They should be a little soft inside when done.
